Celebrate with a light chocolate cake

When you are a follower of a club like Chelsea FC, you don’t come across many reasons to celebrate. However, this week in the second leg of the Champions League semi-final at Camp Nou, Chelsea against all odds beat the Spanish giants Barcelona to the final. Overjoyed by the victory of my club, I instantaneously decided to celebrate and came up with this interesting version of a chocolate cake. You can call it an imitation of chocolate fudge cake because of the exclusion of butter and sour cream, which have been replaced by corn oil and buttermilk, respectively. This recipe is ...

Banana cake with a Nutella twist

I love bananas and I love Nutella, and combining the two leads to sheer magic. While it is very difficult to imagine improving on Nutella, when you combine it with fresh cream, butter, and icing sugar, and then spread this frosting atop a moist cake chock full of bananas and walnuts, the blend of flavours is simply mouth-watering.  For UAE National Day on December 2, I was invited to a barbeque hosted by a friend. Be a Cakeoholic

Like most people in Karachi, my friends and I have grown up with only one form of entertainment: eating out. It is the easiest, most readily available and socially acceptable form of entertainment in Pakistan. From standing in line for hours and trying out a new fast food joint like Hardees, to visiting a hidden gem of an eatery in Saddar, we have done it all and enjoyed it thoroughly too. Recently, with the rise of social media and websites, the food industry has truly thrived, and many new businesses have come up offering an amazing variety of food. Food is no longer just ‘a ...

There are some culinary combinations that gel together nicely and this recipe explores one such combination -cake - instant jelly and custard.  This is a simple yet amazingly tempting dessert that’s ideal for any special occasion. The best part is that it requires very little cooking time. Also, nothing is set in stone here so feel free to experiment with different flavours and combinations. Ingredients Chocolate/marble cake Swiss rolls (I prefer chocolate but you can use any flavour) Vanilla-flavoured custard powder (again, you can have any flavour you like) Milk Sugar Instant jelly (cherry or strawberry – because it adds a little colour to your dessert) Fresh fruits (bananas and apples go well with this ...

Jinnah, minorities and cake

After four years of celebrating Pakistan’s Independence Day on foreign soil, I finally had the opportunity to celebrate the 14th of August in Pakistan. As with most celebrations in Pakistan, this celebration too inadvertently revolved around food. On this momentous occasion, one of my cousins baked a cake that looked like the Pakistani flag. As I was staring at the appetizing green and white cake, I was reminded of a fact that my teacher once told me of how the green in the flag represented the Muslims in Pakistan, and the white the non-Muslims. I smirked to myself and thought ...
